8 oz margarine
8 oz sugar
8 oz porridge oats (rolled oats)
8 oz plain flour
1/2 level teaspoon bicarbonate of soda
2 large eggs
Brush a 12" by 8" baking tin with melted fat. Melt margarine in large saucepan over low heat. Remove from heat and stir in oats, sugar, flour, and bicarbonate. Combine with beaten eggs and spread half the mixture over the base of the tin. Peel and thinly slice bnanas then arrange on base (not too near the edge as mixture spreads during cooking), then cover with rest of mixture. Bake in centr of oven, gas mark 5 (190C) for 25 minutes or until top is well risen and golden brown. Allow to cool slightly then cut into slices.
Makes a good alternative healthy snack to pack in the lunch box!
