Most of us enjoy deviled eggs during the major holidays or at parties. Don't save them for special occasions. These easy deviled egg recipes can be made anytime and are especially fun for kids to help out with. Think about it... they can "decorate" the devil egg with cookie decorating tools, but they're much healthier than cookies. It's a great way to get kids to eat their eggs!
Eggs are a good source of protein and minimal saturated fat, despite the bad reputation they had for a while.
3 Tablespoons mayonnaise, salad dressing or half-and-half
1/2 teaspoon dry mustard
1/8 teaspoon salt
1/4 teaspoon pepper
12 olives slices and/or Paprika(optional)
Steps:
Cut eggs in half lengthwise.
Remove egg yolks and place them in a bowl.
Mash egg yolks with fork.
Add mayonnaise, mustard, salt, and pepper and mix together.
Fill egg whites with egg yolk mixture, dividing among all eggs.
Arrange eggs on a serving plate or in Tupperware and cover.
Refrigerate up to 24 hours.
Garnish with paprika and/or olive slices just before serving (if desired.)
Serves 12
Notes: Add a touch of elegance (or just fun) by using a pastry decorating set to fill the eggs with the egg yolk mixture. The star pattern works well, but have fun experimenting.
Spice up any of our best deviled egg recipes my mixing some horseradish into the egg yolk mixture. This recipe adds horseradish and a few more ingredients for a delicious result:
Add mayonnaise, mustard, salt, pepper, cheese, and horseradish or parsley
Mix together.
Fill egg whites with egg yolk mixture, dividing among all eggs.
Arrange eggs on a serving plate or in Tupperware and cover.
Refrigerate up to 24 hours.
Serves 12
These easy deviled egg recipes are healthier too. We substitute fat-free or low-fat mayonnaise or even yogurt for the traditional high-fat mayonnaise. Your family will never know the difference!
Dry yogurt a bit by spreading it on several layers of heavy-duty paper towels, covering with additional paper towels, and allowing to stand for about 5 minutes.
After 5 minutes, scrape the yogurt into the egg yolk mixture.
Add mustard, relish, salt, and pepper and mix together.
Fill egg whites with yolk mixture, creating mounds.
Refrigerate at least 1 hour (up to 24 hours.)
Sprinkle paprika over top of each egg, just before serving.
