Broccoli Mac and Cheese

My daughter happens to really like her veggies, but she goes through periods where I can't get her to eat anything somewhat good for her. Kids love mac and cheese, but the box kind is filled with dyes and preservatives and Velveta cheese is pretty fattening too. So as an alternative I started using Broccoli and Cheese soup. Many soups are being made lower in sodium and using sea salt in place of regular salt. My daughter loves this stuff.



1 can of condensed Broccoli and Cheddar soup(I use Campbells)

1/2 soup can of milk(I use 2%milk)

2 cups pasta cooked and drained( I use Ronzoni Macaroni Style Quick Cook 3 min pasta)

Parmesan Cheese to sprinkle on top

Cook and drain pasta and place back in the pot. Many people salt their pasta while it's cooking for flavor, but this step can be skipped since there is enough salt in the soup.Mix in Broccoli and Cheddar soup and milk until well blended. Top each bowl with Parmesan cheese. This is quick, easy, and a delicious way to sneak in a serving of veggies.
