Cheesy Mexican Casserole

This started out as a simple quick 1 person dinner in the spaghetti squash shell, and evolved into a casserole for family and friends! We are all on a low-carb diet and this is a very low carb meal, if any carbs at all.


Ingredients:
1/2-1 spaghetti squash
3 Tbsp butter (or I Can't believe it's not butter)
2 medium cooked/cubed boneless & skinless chicken breasts
1 jar of your favorite salsa
1 Cup Mexican shredded cheese

1.Preheat oven to 350. Prepare & Cook the spaghetti squash.
2.Layer the strands of squash on the bottom of a medium sized casserole dish.
3.Cube the butter and place on top of the squash strands. 4.Spread the cubed chicken on top of the squash and butter
5.Pour and spread the salsa on top of that.
6.Sprinkle the cheese all over
7.Cook for approx 20 mins or until the cheese is melted.
