Chicken crock pot recipes are some of the easiest and most kid-friendly recipes around. You can
cook crock pot meals earlier in the day, when things tend to be less hectic, rather than in the early
evening when family life is really swirling (homework, kid sports, office work,...)
And kids tend to like crock pot recipes for chicken more than many other meats or fish. Chicken doesn't
have a strong flavor on its own and it tends to take on the flavors of whatever ingredients you cook with
it. And chicken recipes tend to be healthier than those made with red meat.
Here are some of our family's favorite crock pot recipes for chicken. Enjoy and

2 lbs tomatoes, diced (we prefer Roma tomatoes, seeded and quartered)
2 cups whole black olives (or 1 16-ounce can, drained) We prefer Kalamata olives
1 cup feta cheese, crumbled
Steps:
Add olive oil, wine, sun-dried tomatoes, oregano, garlic, onion powder, and pepper to crock pot and stir to combine.
Add chicken, tomatoes, and olives. Stir to coat with spice mixture.
Cover and cook on LOW for 8 hours.
Serve with feta cheese sprinkled on top.
Serves 6
Notes: A variation is to remove the chicken pieces from the crock pot when finished cooking and then stir the
feta into the remaining mixture. This leaves a nicely melted tomato-feta mixture. My kids always prefer to
see their cheese right on top though ;-)
Italian Stallion Crock Pot Chicken
Ingredients:
1/2 medium onion, chopped
1/2 bell pepper, chopped
3 Tablespoons tomato paste
2 Tablespoons olive oil (we prefer extra virgin)
2 Tablespoons dry red wine
1 Tablespoon minced garlic
1 14.5-ounce can diced tomatoes, drained
1 small can slicked black olives, drained
1 teaspoon black pepper
1/2 teaspoon oregano
1/4 teaspoon salt (optional)
1/4 teaspoon crushed red pepper (optional)
2 lbs boneless, skinless chicken, fat trimmed
shaved parmesan cheese (optional)
Steps:
Add all ingredients, except chicken, to the crock pot. Stir to mix.
Add chicken and stir to coat.
Cover and cook on LOW for 8 hours.
Serve with parmesan cheese shavings on top (optional).
Serves 4
Notes: For the first time you offer this to kids, you might want to serve ONLY the chicken with parmesan
and NOT spoon any of the sauce mixture onto their plates. Once they love it, you can try serving with more
and more of the sauce.
