Delicious Emerald Smoothie

  • 2 cups fresh, ripe Pineapple, (if you have a Vita-Mix, you can even include the core)
  • 1 stalk Celery (cut into small pieces if necessary)
  • 1 cup Spinach Leaves, gently packed
  • 4 ounces Vanilla Yogurt (fat-free or lowfat) or Vanilla Soymilk
  • 2 cups Ice
  • Honey or Wweetener to taste if pineapple is a bit tart

Mix all ingredients until smooth and enjoy!

I used Soy Milk with this recipe and I LOVED it! The kids are so so, can't please them all :) Two of them drank it right up, the other three were just sipping. I used one whole piece of celery, which was probably too much.
