Delicious Emerald Smoothie

- 2 cups fresh, ripe Pineapple, (if you have a Vita-Mix, you can even include the core)
- 1 stalk Celery (cut into small pieces if necessary)
- 1 cup Spinach Leaves, gently packed
- 4 ounces Vanilla Yogurt (fat-free or lowfat) or Vanilla Soymilk
- 2 cups Ice
- Honey or Wweetener to taste if pineapple is a bit tart
Mix all ingredients until smooth and enjoy!
