Fresh Italian Spaghetti Squash

Cut squash in half, lengthwise and remove seeds.

Cook until tender. (I put it in a baking dish with water in the bottom and bake/microwave it)

While it's cooking, cut one ball of mozzarella and a few plum tomatoes into small cubes. Also, tear/cut up some fresh basil.

Seperate the strands from the skin, keeping the shells intact.

Toss the strands with mozzarella, tomatoes, basil, some olive oil, parmesan cheese and salt and pepper to taste.

Put the mixture back in the shells and bake until the cheese cubes are melted.
