Patty Pan and Tomato Dish

Patty Pan Squash is good mixed with fresh tomatoes or canned tomatoes. You can fix it on top of the stove or in the oven. In the summer when you don't want to heat the oven you can boil it on top of the stove.


The ingredients are as follows:

  • Patty Pan Squash
  • fresh or canned tomatoes
  • 1 small onion
  • basil or any herb of your choice
  • 1/2 teaspoon salt
  • pepper to taste
  • 1-2 teaspoons light margarine
  • Mozzarella Cheese on top if you bake it


Directions:

  1. Cut squash top and bottom off.
  2. Wash and cut into bite size pieces.
  3. Wash and cut tomatoes up and chop onions.
  4. Mix the three ingredients together.
  5. Add basil, salt and pepper.
  6. Pour into medium size pan and cook on top of the stove until the squash is tender to taste.
  7. If not enough liquid in tomatoes, add a little water.
  8. After cooking the squash dish, add a couple of teaspoons of light margarine to the dish.
  9. Sprinkle with a little Parmesan cheese and enjoy.

Butter instead of margarine for me

fresh Amish butter if you can find it, is, for me, the healthiest. All fresh, why ad anything artificial.

My Husband's Memory Of His Mom's Dish

My hubby had started, in our early years of marriage, telling me about the squash his much loved Mom used to make. He loved it so! Well, he showed me the squash she used - which I had never seen before! I asked him what to do..he didn't really know exactly. I tried to do what I thought was what she may have done. It didn't work. He said, though very kindly, it didn't taste a thing like it. Fast forward 19 years..

As I had disappointed him years ago (at least in my mind I did), I had not tried it again since. But one day recently we were shopping and I saw the squash setting there! I told him, I am going to get some of these! I could see a look on his face. Was it terror? I promised him this time if he didn't like it, it was the end of patty pan in our house.

The day came and, while he was golfing, I came on line to quickly look up Scalloped Patty Pan. I felt after musing all those years that it had to be something like a 'scalloped potato' dish. But the one I found didn't seem like what he had tried to describe. I then found a recipe called Patty Pan and Tomato dish. I thought it read somewhat like he had described. Altho I peeled my squash, I made the mix of ingredients but with a few revisions. I only par-boiled it and put it in a sprayed dish with butter flavored spray and added the squash mixture in 2 layers, sprinkling flour in between. I also added a hint of Italian Seasoning along with the basil. I then baked it, covered in a 400 degree oven for about 40 minutes. I also sprinkled some Mozarella on top.

When my hubby sat down to eat, I could see he was apprehensive! He took a fork full, and took a bite. I didn't ask how he liked it like I usually did with new dishes. He didn't say a word nor did he show his reaction on his face. Finally after about 6 bites I asked him what did he think. He looked at me and told me it was absolutely delicious! I accepted that. Then, when dinner was done, I asked him how did it compare to his memory of his Mom's dish. He said it was very, very, very, very close! When he then said to me " I wonder if (his brother) would taste it if he took some over. (his brother lived next door.) I said I was happy then! I told him I wanted to give him the feeling of a memory of his loving Mom's dish just once at least in our years together and I had finally succeeded! I am so glad to have found this dish! Thank you Helen!

Add Margarine To Dish

I forgot to put light margarine in the recipe. After cooking the squash dish, add a couple of teaspoons of light margarine to the dish. It gives it more flavor. Thank you, Helen
