Sausage Spaghetti Squash

1 Squash any size desired

1 Pound Sausage ( Jimmy Dean or Tennessee Pride works well)
1/2 Cup Brown Sugar or Honey
1 14.5 Oz. Can of Stewed Tomatoes
Salt and Pepper
1 12Oz. container of Dr. Pepper.

Cut Squash in half lengthwise and remove seeds. Place both halves of squash in baking dish, cover the inside and top of squash with your choice of brown sugar or honey.

Add 1/2 pound of sausage to each half and top with 1/2 can of stewed tomatoes. Salt and Pepper to taste. Pour container of Dr. Pepper into the bottom of the dish. You can get creative here and pour a little of the soda into each squash half, this lends a provocative flavor to the squash!
Cover dish as necessary and bake in a 375 degree oven for 60-75 minutes.

When done each half becomes its own serving container, spaghetti sauce can be used to compliment the dish but we've found the flavors presented by the recipe is its own reward! Enjoy!!

A hit with our kids!

I might have gone a little heavy on the brown sugar and my family all agreed that it was a little too sweet, but everyone enjoyed it for something different and we all want to try it again without the sweetness.

I made this only because it sounded so strange, and was pleasantly surprised!! Our Kroger carries Jimmy Dean's reduced fat sausage in the roll, so I use that to cut out some unnecessary calories and grease, but this has become a fall menu favorite. Thanks!
