Southern Baked Squash Slices

  • 4 medium squash
  • grated parmesan cheese
  • 1 pint milk
  • 1/2 cup cornmeal mix
  • 1/2 cup flour
  • 1 egg
  • salt


Slice squash in long slices (1/8th inch thick) mix milk and eggs to make a egg wash....combine both cornmeal and flour together in paper bag.

Dredge the squash slices in milk and egg mixture and place in bag containing the flour and cornmeal.

Place each slice on a cookie sheet (spray cookie sheet with Pam to keep squash from sticking)..sprinkle salt to taste and grated parmesan cheese over squash and cook in oven at 400 deg. until golden brown...(Don't turn them over)
