Stuffed little crookneck squash
(Fond du Lac, Wi)
2 little yellow crookneck squash for each person
90% lean beef
small onion (ground fine)
large can V8
These are made much like stuffed cabbage leaves.
cut necks off squash--
using a knife or t spoon to remove seeds leaving a shell
Make a mixture of 1/2 raw rice and beef. Add onion, salt and pepper Mix well and stuff squash shells---not too loosely.
Stand stuffed squash into a pot and pour in all of V8.
Bring to a boil and turn burner down. It takes about 45 minutes to cook rice thoroughly. Depending on how many squash you have it may require more V8. I used to make as many as 20 at a time when my family was home, now I make only 5 or 6 at a time for my husband and I.
