summer squash bacon saute

- patty pan squash (yellow and white) - 1 of each (med or lg)
- crookneck (or straightneck) squash - 1 medium
- 6 slices bacon
- 1/2 large onion (1 whole if an onion lover)
- salt and pepper to taste
Cook bacon (crisp). Crumble. Set aside Cut onion (about 1 inch chunks)Saute until clear Slice squash in 1/2 slices - saute with onion until desired texture (el dente, softer, etc) Add bacon for last minute. Salt and pepper. Easy on the salt since bacon is part of the recipe. Cayenne pepper for that extra kick!
Zucchini can be added for a pretty tri colored dish. Dish up into a serving bowl for presentation. Garnish with 1 red bell pepper ring.
