"They'll never know" Meatballs

1 lb. ground chicken
1 1b. italian turkey sausage
1 cup hummus (I like roasted red pepper or garlic flavor)
1/2 cup finely chopped kale or spinach or both
1/2 cup finely shredded carrot (use a cheese grater)
Italian seasoning to taste (low sodium)
Preheat oven to 375
Mix all ingredients until thoroughly combined.
Using a melon baller or small ice cream scoop, form mixture into balls and place on a cookie sheet prepared with cooking spray.
bake 25 minutes
These meatballs are great when added to marinara sauce. I have made meatball subs with these and also added them to vegetable soup. My son loves them plain! These freeze exceptionally well so make a bunch!
