Yellow Squash Casserole Recipes

Yellow Squash Casserole Recipes are the most common of the Squash Casseroles. Yellow Squash, one of the Summer Squash varieties, is nutritious, generally bountiful in the garden, and easy to bake into wonderful, tasty casseroles.

There's no need to stick to the traditional yellow squash casserole recipes though. Try these recipes for some variety:


Traditional Yellow Squash Casserole

Ingredients:
  • 6 Cups sliced Yellow Squash (1/4-inch slices)
  • 1/4 Cup Chopped Onions
  • 1 Cup Shredded Carrots
  • 1 can Cream of Mushroom Soup, condensed, reduced-salt
  • 1 Cup Sour Cream (low-fat works fine)
  • 1 7-oz package Stuffing Mix Cubes
  • 1/2 Cup Butter, melted, or Olive Oil
  • 1 Cup Grated Extra Sharp Cheddar Cheese

Steps:

  1. Preheat oven to 400 degrees.
  2. Add squash, onions, carrots, and a small amount of water to a saucepan.
  3. Cook, covered, until squash is tender.
  4. Drain.
  5. Add mushroom soup and sour cream to squash mixture.
  6. In separate bowl, mix melted butter/olive oil, stuffing mix cubes and grated cheese.
  7. Spoon half of stuffing mix onto the bottom of a 4-quart baking dish (8x8 or 9x9 inch).
  8. Spoon all of squash and then the other half of stuffing mix on top.
  9. Bake, uncovered, for 20-25 minutes or until browned.

Another of our favorite traditional yellow squash casserole recipes is this one:

Traditional Yellow Squash Casserole #2

Ingredients:
  • 1 lb Yellow Squash, chopped
  • 1 Onion, chopped
  • 3 Tablespoon Butter Or Olive Oil
  • 2 Whole Eggs, Beaten
  • 1/2 Cup Cheddar Cheese, shredded
  • 1 Cup Milk
  • 1 Cup Cracker Crumbs (Saltines or your favorite)
  • 1/2 teaspoon Salt
  • Pepper (to taste)

Steps:

  1. Preheat oven to 375 degrees.
  2. Combine squash, onion, and butter/olive oil in a skillet.
  3. Saute until squash is tender.
  4. Coarsely mash the squash mixture with fork.
  5. Add remaining ingredients and stir.
  6. Pour mixture into greased 1 1/2-quart casserole.
  7. Bake at 375 degrees for 20-30 minutes (until a knife inserted near center comes out clean.)
  8. Serve and enjoy.

Serves 4-6


Here are some Yellow Squash Casserole recipes which are a little less traditional:

Yellow Squash Casserole with Eggs

Ingredients:
  • 1/4 cup chopped onions
  • 1 tablespoons butter, melted, or olive oil
  • 3 tablespoons butter or olive oil
  • 3 hard boiled eggs, chopped
  • 3 yellow squash, diced, about 3 cups
  • 2 eggs, beaten
  • 1/3 cup half-and-half
  • 1/4 cup bread crumbs

Steps:

  1. Preheat oven to 350 degrees.
  2. Toss bread crumbs with 1 Tablespoon of the melted butter or olive oil.
  3. Sauté onion in butter or olive oil.
  4. In a large bowl, stir together onions and butter/olive oil with squash and chopped hard boiled eggs.
  5. Coarsely mash the squash mixture with fork.
  6. Spoon squash mixture into a greased 1 1/2-quart casserole.
  7. Mix beaten eggs and half-and-half.
  8. Pour egg mixture over squash.
  9. Sprinkle top with buttered bread crumbs.
  10. Bake at 350° for 30 minutes or until casserole is bubbly and topping is browned.
  11. Enjoy.

Simple No-Cheese Yellow Squash Casserole

Ingredients:
  • 5 pounds Yellow Squash, sliced (1/4 thick)
  • 2 Eggs, beaten
  • 1/2 cup Butter or Olive Oil
  • 1/4 cup Sugar
  • 2 Tablespoons Onion, chopped
  • 1/2 teaspoon Salt
  • Pepper to taste
  • 1 cup Dry Bread Crumbs

Steps:

  1. Preheat oven to 350 degrees.
  2. Cover squash with water in a large saucepan.
  3. Cook over medium heat until tender, about 10 minutes.
  4. Drain and mash squash.
  5. Mix the remaining ingredients, except bread crumbs, into to the squash.
  6. Spoon squash mixture into a 2 quart casserole.
  7. Sprinkle bread crumbs on top.
  8. Bake at 350° for 20-25 minutes or until casserole is bubbly and browned.
  9. Enjoy.
