Yellow Squash, one of the Summer Squash varieties, is nutritious, generally
bountiful in the garden, and easy to bake into wonderful, tasty casseroles.
There's no need to stick to the traditional yellow squash casserole recipes though.

Traditional Yellow Squash Casserole
Ingredients:
6 Cups sliced Yellow Squash (1/4-inch slices)
1/4 Cup Chopped Onions
1 Cup Shredded Carrots
1 can Cream of Mushroom Soup, condensed, reduced-salt
1 Cup Sour Cream (low-fat works fine)
1 7-oz package Stuffing Mix Cubes
1/2 Cup Butter, melted, or Olive Oil
1 Cup Grated Extra Sharp Cheddar Cheese
Steps:
Preheat oven to 400 degrees.
Add squash, onions, carrots, and a small amount of water to a saucepan.
Cook, covered, until squash is tender.
Drain.
Add mushroom soup and sour cream to squash mixture.
In separate bowl, mix melted butter/olive oil, stuffing mix cubes and grated cheese.
Spoon half of stuffing mix onto the bottom of a 4-quart baking dish (8x8 or 9x9 inch).
Spoon all of squash and then the other half of stuffing mix on top.
Bake, uncovered, for 20-25 minutes or until browned.
