Zucchini Jelly

(Irene, SD 57037)




6 cups ground zucchini (peeled)
6 cups sugar
Bring to boil and boil for 10 minutes
1 cup ground pineapple
Boil for another 5 minutes
1 package pectin (dried preferred)
Boil for another 5 minutes
1 regular package of any flavor Jello
Boil for one minute

Pour into sterile pint jars (or jelly jars if you prefer)
Seal either with wax or sterilized seals and lids.
Delicious on pancakes or waffles, as well as on buttered or peanut buttered bread.
